LESLEY’S CRAYFISH SALAD

Our dear friends Lesley and Gerrit Wyma live in Stellenbosch, South Africa. They are the owners of Cape Hutton Wines, which have won many international awards. We spend quality time together when they visit us on the farm every six weeks. Lesley makes this crayfish salad with its wonderfully fresh and clean taste.

6 crayfish tails, boiled slightly, in salted water until the meat just turns white, cut into pieces with shell on
3 large ripe tomatoes, chopped
A bunch of fresh Basil leaves, chopped
4 cloves of garlic, crushed
1 small onion, grated
1 cm fresh ginger, grated
45 ml olive oil
10 ml lemon juice
Salt and pepper to taste

Pour over the crayfish and let stand for an hour for the flavours to blend.
Serve with fresh Basil and cherry tomatoes as garnish.[/vc_column_text]
